Aspergillus Oryzae, known in English as koji, is a culinary fungus used in the fermentation process of many Japanese cuisine staples such as soy sauce, rice vinegar, miso soup, and a range of other traditional ingredients found in Japanese kitchens.

The oryzae fungus (pronounced ōˈrīzā) is widely known to provide good mental and physical health as well as dietary support. It's no wonder they named this establishment Oryzae Japanese Cuisine, as it adds to the growth and health of Squamish's community—both literally and figuratively.

Located in downtown Squamish, this is many local's favourite sushi shop. Be careful when you choose to go, Oryzae is open for lunch and dinner, but has a two-and-a-half hour slice in between when they are closed from 2:30pm-5pm.

Dishes are delicious, aesthetic, and leave you feeling invigorated for your day. Especially if you go for lunch! Oryzae's got a lunch combo meal that never gets old including a miso soup, choice of main, choice of salad, and a sushi for between $12-$15.  Bite into a tuna or salmon sashimi, or try the extremely memorable Salmon Taco with BBQ salmon, avocado, greens + mango sauce in a hard shell.
